Ingredients: to serve 4

2 apples
8 oz / 225g hard white cabbage
6 oz / 150g carrot
2 oz / 50g celery
2 oz / 50g onion
1 oz / 25g parsley
1tsp / 1g caraway seed
1 spoon olive oil
1 spoon vinegar
salt to taste


Instructions:
Core and dice the apples, slice the cabbage as thinly as possible, slice the celery and onion and grate the carrot.
Mix all the ingredients together and mix again before serving.
