Ingredients:

4 oz / 100g butter
2 garlic cloves
salt to taste
½ oz / 10g chives


Instructions:
Warm the butter slightly and then beat into a cream.
Use a pestle and mortar to grind the garlic with the salt into a paste, and then beat into the creamed butter.
Gently mix in the chives.
Refrigerate until ready to serve.


Ingredients:
4 oz / 100g butter
1 tbsp / 45ml chopped parsley
1 tsp / 5ml capers
1 tbsp / 45ml vinegar
Instructions:
Heat the butter until it becomes brown (not black).
Add the chopped parsley and capers to the hot butter.
Immediately before serving stir the vinegar into the hot butter.
Serve hot.
