Ingredients:

1/8 pint / 75ml olive oil
1 onion
2 garlic cloves
2 lb / 1Kg tomato or one tin chopped tomato
1 carrot
1 celery stick
1 oz / 25g sugar
fresh ground black pepper to taste
salt to taste


Instructions:
Cook the chopped onion and garlic slowly in the oil until soft.
Add the other ingredients, finely chopped, and simmer gently for at least one hour until the sauce is thickening.
Liquidise before serving.
