Mincemeat Recipe: Gluten-free

Ingredients: to make 2 lb mincemeat
1 lemon 4 oz / 100g sultanas 4 oz / 100g raisins 4 oz / 100g currants 8 oz / 200g apples with cores removed 4 oz / 100g suet 1 oz / 25g candied peel, mixed 4 oz / 100g caster sugar ¼ tsp / 0.5g mixed spice ¼ tsp / 0.5g ground ginger ¼ tsp / 0.5g ground nutmeg ¼ tsp / 0.5g ground cinnamon ¼ tsp / 0.5g ground mace 1/8 pint / 75ml brandy |
Instructions:
Chop the lemon, peel and all, and cook in a little water until soft. Then chop finely in a food processor.
Chop all the remaining fruit and suet in small quantities in a food processor quite finely.
Mix all the chopped fruit together with the lemon, suet and spices and sugar.
Mix in the brandy, cover the bowl and leave to stand for 24 hours. Mix again before pressing into jars.
Keep at least two weeks before using
