Ingredients: makes 20 biscuits

8 oz / 200g rice flour
4 oz / 100g caster sugar
4 oz / 100g butter or margarine
1 egg
flavouring


Instructions:
Beat the butter on its own into a cream.
Beat the egg on its own.
Stir the flour and sugar into the butter.
Stir the egg into the mixture and mix well.
Roll small balls of the mixture and then flatten these onto a greased baking tray.
Cooking:
Preheated oven
gas mark 4 350°F 180°C
Bake for 12 to 18 minutes until brown.
Turn out onto a wire mesh to cool and dry.
Store in a container with an airtight lid.
Flavourings:
1 oz / 25g cocoa powder
OR
1 tsp instant coffee powder
OR
1 tbsp orange juice
OR
2 drops vanilla essence
